WALDORF SALAD
The festive entertaining season is here, and what better dish to share with family and friends than one which is not only simple to prepare, but both delicious and good for you!
Olivia Brown from The Family Foodie has shared this simple and delicious Waldorf Salad with us.
This is such a simple, classic salad and if you haven’t made one for a while, (or have never made one) do yourself a favour and throw one together very soon.
It’s not only delicious, but also jam-packed with fibre and goodness from the nuts, grapes, celery and apple.
(Serves 6 as a side dish)
INGREDIENTS
- 300gms mixed lettuce leaves
- 2 green apples, thinly sliced
- 2 sticks of celery, thinly sliced
- 2 large handfuls walnuts, toasted
- 2 large handfuls of seedless red grapes, halved
- 2 heaped tbsp whole egg mayo
- Juice of 1 lime 1 tsp
- Dijon mustard
METHOD
To make the dressing, simply mix mayo, juice and mustard in a bowl and season with a little salt and pepper.
Place all salad ingredients in a bowl, just prior to serving add dressing and toss to combine. Serve on a nice platter or bowl.
NOTES
This salad is perfect to take to a BBQ. The dressing can be prepared at home earlier and packed it in a small leak-proof container or jar and simply give it a good shake and dress the salad just prior to serving.
This is also easy enough for a quick weeknight meal with some chicken or even salmon. Enjoy!
